
OMIGODDDD – Let me introduce you to this salad bowl recipe, because holy F$#%, it’s soooo good!
I will also preface by saying, these are NOT your typical, boring-ass salads. Nothing is worse than a cold, jaw-biting (the kid of salads where your jaw hurts from gnawing on hard carrots and kale lol), lame salad for dinner.
These are gorgeous, yummy, exotic salads that will fill you right up.
But let me back up for a second. When Covid hit, and we realized that we were going to be at home, in our condo, sitting on our asses most of the day, I knew we had to do something to keep extra healthy.
Andrew and I are pretty damn good about eating healthy overall, but I felt like we needed to do more since being home.
So, we ordered the at-home gym stuff, got on all kinds of work-out videos, took 45 minute walks everyday, etc.
And then one day, I happened to be passing by Freshii, and stopped in for a quick meal. I got one of their salad bowls and immediately got inspired to do my own bowls!
I got home, and did a bunch of quick Google searches on salad bowl recipes. I like to see what other recipes are out there before tweaking it and making it my own.
I ALSO had to sell this to Andrew, because again, when you mention “salads” for dinner, no one wants to listen. LOL. So I had to be creative with the way I brought this up. I had to really sell the type of veggies going into the bowl, the protein that would fill him up, the yummiest salad dressing he would ever taste, etc. { Stalk my salad dressing shaker here }
Anyway, somehow he agreed to trying out these salad bowls with surprisingly not much convincing.
I headed to the grocery store, grabbed everything we needed, made a homemade inspired dressing that night, and the rest is history! 3 weeks later, we’re still eating these salads!!
OH, and did I tell you that Andrew lost 10 pounds in two weeks from eating these salads?! I will also say, the goals was not to lose weight. It was to eat healthy and not gain any more weight while being quarantined. But 10 pounds shed super quickly, so I’m sharing that if it’s your goal.
Again, it wasn’t just the salads that made him lose the weight. It was a combination of the salad bowls, the working out a few times a week, and 45 minute walks every night. But I’d say 80% were these bowls!
Kk, let’s get into this salad bowl recipe:

BOMB SALAD BOWL RECIPE.
What you need for the bowl:
- Whatever greens you want – Spinach, Kale, Arugula. Spinach is what we used.
- Romaine lettuce
- Cous cous or quinoa
- Sweet potatoes
- Avocado
- Broccoli
- Cucumbers
- Shredded carrots
- Artichoke hearts
- Chickpeas
- Meat if you want – We used shrimp, but anything goes well.
What you need for the dressing:
- Sesame oil
- Soy Sauce (or alternative)
- Balsamic vinegar
- Lemon
- Pepper
What I love to do is, the second I get home from the groceries with all my veggies, is wash them, dry them, and put them into individual containers. That way when we’re about to make dinner, I just need to grab ALL the containers out of the fridge, lay them out, and create my bowls right away. I don’t have to think about cutting and washing veggies when it’s time for dinner. Easy and efficient – that’s the goal here.
So, once I’ve got everything laid out, I can start making my bowls. I start with the grains, then greens, and then I just add everything else. I top up with warm protein – either chicken on shrimp for me. Andrew will do steak sometimes too.
In my amazing salad dressing shaker, I mix the dressing ingredients all together, shake it up, and pour over my salad.
That’s it. And TRUST me when I say you will 100% be full if you eat one of these. Andrew RAVES about these salads to everyone. He’s even got my parents on them. Which is shocking because my dad can eat a steak for 4 in one sitting…
Anyway, I urge you to try out this salad bowl recipe, and report back. You will not be disappointed. And of course, you don’t have to make them exactly the way I do. Switch it up with whatever you want. Google different dressing.
