Salads are a great way to add some health into your lifestyle. We can all get a bit out of hand when it comes to healthy eating. It can be time consuming and expensive. I know with my crazy lifestyle, it’s sometimes just easier to grab some fast food, or on a really busy day, end up having a coffee for lunch! We need to make sure we are feeding our bodies. Not just feeding them, but also feeding them the good stuff.
This amazing chopped salad was super fast and easy, and not to mention, healthy!
What you need:
- Your favourite greens. Ie. Lettuce, Spinach, Arugula, Kale
- Protein. I used chicken. You can even substitute meat for chickpeas
- 1 Bell pepper
- Cheese. I used Jalapeno Havarti cheese. Mmm, my fave!
Start by chopping up your greens. I used a mixture of spinach and arugula. Kale goes really well with a chopped salad as well. Chop them up as small as you’d like. Add them to your bowl.
Chop up all the veggies you want to add in. The veggies mentioned above are the ones I added in my salad. Of course, you can add pretty much anything you like to this salad!
My absolute favourite garnish on pretty much everything, is cilantro! I know many people aren’t a fan of this, but I love it, and therefore it goes in this salad as well. Chop it up finely, and add to the bowl.
If you are going to add meat to your salad, I recommend prepping this before you begin chopping up your veggies. I used two skinless, boneless, chicken breasts. Add your seasonings as you would like, and bake the chicken for 30 minutes. Once it’s cooled down, add to the bowl, or serve separately on the side.
Lastly, I added the jalapeno Havarti cheese. Grate which ever cheese you like and add on top of the salad.
Mix everything well, and add your favourite dressing to the salad. I prefer a poppy seed, or Asian sesame-seed dressing. You can even just add some olive oil and lemon for a more natural tasting chopped salad.
